What is a Panuozzo?

A panuozzo is the ultimate Neapolitan street food. Born in Gragnano, near Naples, it's made from the same 48-hour fermented dough as our pizzas—folded over premium ingredients and baked in our wood-fired oven until perfectly charred.

Think of it as a pizza's cooler, more portable cousin. Crispy outside, soft inside, stuffed with flavor. The kind of thing you crave at 2AM—and we deliver.

Our Neapolitan Roots

We don't do shortcuts. Our dough ferments for 48+ hours using imported Italian flour. Our tomatoes come from San Marzano. Our mozzarella is flown in weekly.

Every pizza hits 900°F in our wood-fired oven for exactly 90 seconds. That's how Naples does it. That's how we do it. No exceptions.

Why Saint-Laurent?

Saint-Laurent is where Montréal's cultures collide. It's gritty, vibrant, and never sleeps. Just like us.

This is where late-night cravings meet authentic Italian fire. Where students, artists, and night owls gather for something real. We're not a fancy restaurant—we're your 2AM spot.

Our Philosophy

Heat

900°F. That's our standard. Real Neapolitan fire, nothing less.

Speed

In and out. Hot and fast. Because cold pizza is a tragedy.

Quality

Premium ingredients. Zero compromise. Every single time.
